Wine Biscuits
These traditional wine biscuits are rustic, lightly sweet and wonderfully crisp. Made with white wine and olive oil, they have a delicate crumb and golden exterior. Perfect with coffee, tea or dessert wine.
Ingredients
- 500 g plain flour
- 150 g sugar
- 120 ml extra virgin olive oil
- 180 ml dry white wine
- 8 g baking powder
- Extra sugar for coating
How to Make It
- Place flour, sugar and baking powder in a bowl
- Add olive oil and mix until sandy
- Pour in the white wine and mix to form a dough
- Knead briefly until smooth
- Cut small pieces and roll into ropes
- Shape into rings or small ovals
- Dip one side into sugar
- Place on a lined baking tray
- Bake at 180°C for 25–30 minutes until lightly golden
Tips
- Do not overwork the dough
- Flavor with lemon zest, anise seeds or vanilla if desired
- Dip in sugar before baking for classic texture
- Keep biscuits pale, not overly browned
Storage
- Store in an airtight container for up to one week
- Not suitable for freezing
