Wine Biscuits

These traditional wine biscuits are rustic, lightly sweet and wonderfully crisp. Made with white wine and olive oil, they have a delicate crumb and golden exterior. Perfect with coffee, tea or dessert wine.

Ingredients

  • 500 g plain flour
  • 150 g sugar
  • 120 ml extra virgin olive oil
  • 180 ml dry white wine
  • 8 g baking powder
  • Extra sugar for coating

How to Make It

  • Place flour, sugar and baking powder in a bowl
  • Add olive oil and mix until sandy
  • Pour in the white wine and mix to form a dough
  • Knead briefly until smooth
  • Cut small pieces and roll into ropes
  • Shape into rings or small ovals
  • Dip one side into sugar
  • Place on a lined baking tray
  • Bake at 180°C for 25–30 minutes until lightly golden

Tips

  • Do not overwork the dough
  • Flavor with lemon zest, anise seeds or vanilla if desired
  • Dip in sugar before baking for classic texture
  • Keep biscuits pale, not overly browned

Storage

  • Store in an airtight container for up to one week
  • Not suitable for freezing
