Vegetarian Paella
Vegetarian paella is a vibrant and flavourful rice dish packed with vegetables and aromatic spices. Cooked slowly to allow the rice to absorb all the flavours, it is a hearty and satisfying meal perfect for sharing.
Ingredients
- 320 g rice
- 1 zucchini
- 1 bell pepper
- 1 carrot
- 100 g peas
- 1 small onion
- 30 ml extra virgin olive oil
- 800 ml vegetable stock
- 1 tsp paprika
- Salt to taste
- Black pepper to taste
How to Make It
- Chop zucchini, pepper and carrot into small pieces
- Finely chop the onion
- Heat olive oil in a wide pan
- Add onion and cook until soft
- Add vegetables and cook for a few minutes
- Stir in the rice
- Add paprika and mix
- Pour in hot vegetable stock
- Season with salt and pepper
- Cook without stirring for about 18 to 20 minutes
- Add peas during the last minutes
- Cook until rice is tender and liquid absorbed
- Let rest for a few minutes before serving

- Use a wide pan for even cooking
- Do not stir too much
- Add stock hot
- Let rest before serving

- Keep refrigerated for up to 2 days
- Not suitable for freezing
