Vegetarian Paella

Vegetarian paella is a vibrant and flavourful rice dish packed with vegetables and aromatic spices. Cooked slowly to allow the rice to absorb all the flavours, it is a hearty and satisfying meal perfect for sharing.

Ingredients

  • 320 g rice
  • 1 zucchini
  • 1 bell pepper
  • 1 carrot
  • 100 g peas
  • 1 small onion
  • 30 ml extra virgin olive oil
  • 800 ml vegetable stock
  • 1 tsp paprika
  • Salt to taste
  • Black pepper to taste

How to Make It

  • Chop zucchini, pepper and carrot into small pieces
  • Finely chop the onion
  • Heat olive oil in a wide pan
  • Add onion and cook until soft
  • Add vegetables and cook for a few minutes
  • Stir in the rice
  • Add paprika and mix
  • Pour in hot vegetable stock
  • Season with salt and pepper
  • Cook without stirring for about 18 to 20 minutes
  • Add peas during the last minutes
  • Cook until rice is tender and liquid absorbed
  • Let rest for a few minutes before serving

Tips

  • Use a wide pan for even cooking
  • Do not stir too much
  • Add stock hot
  • Let rest before serving

Storage

  • Keep refrigerated for up to 2 days
  • Not suitable for freezing
