Sweet Peppers Pan Cooked

A quick and traditional Southern Italian side dish made with sweet friggitelli peppers sautéed in olive oil. Light and flavourful, they are perfect alongside meat, fish, or crusty bread.

Ingredients

  • 400 g friggitelli peppers (14 oz)
  • 2 garlic cloves
  • 40 ml extra virgin olive oil (3 tbsp)
  • Salt to taste

How to Make It

  • Wash and dry the friggitelli peppers
  • Leave the peppers whole
  • Lightly crush the garlic cloves
  • Heat olive oil in a large pan
  • Add garlic and cook until fragrant
  • Add peppers to the pan
  • Cook over medium heat, stirring occasionally
  • Season with salt
  • Cook for about 12 to 15 minutes until soft and slightly blistered
  • Remove garlic before serving
  • Serve warm

Tips

  • Do not overcrowd the pan for better blistering
  • Keep peppers whole for traditional texture
  • Cook on medium heat to avoid burning
  • Finish with a drizzle of olive oil before serving

Storage

  • Keeps 2 days refrigerated
  • Best eaten freshly cooked
  • Not suitable for freezing
