Sweet and Sour Sauce

A traditional sweet and sour sauce made with tomato paste, sugar, and vinegar. Balanced between sweet and tangy, perfect for spring rolls, tempura, or stir-fried dishes.

Ingredients

  • 130 g tomato paste (1/2 cup)
  • 125 g sugar (1/2 cup + 2 tbsp)
  • 500 g water (2 cups)
  • 125 g white wine vinegar (1/2 cup)
  • 35 g potato starch (1/4 cup)
  • 4 tbsp water for slurry (1/4 cup)
  • 2 fresh chili peppers optional

How to Make It

  • Pour water into a saucepan and bring to boil
  • Add sugar and tomato paste
  • Stir until dissolved
  • Pour in vinegar and bring back to boil
  • In a small bowl mix potato starch with water
  • Stir until a smooth slurry forms
  • Pour slurry into the sauce gradually
  • Whisk continuously until thickened
  • Add chopped chili if using
  • Cook briefly until glossy and smooth
  • Remove from heat and serve

Tips

  • Add starch slowly to control thickness
  • Whisk constantly to avoid lumps
  • Use chili for a spicy variation
  • Adjust vinegar for sharper taste

Storage

  • Keeps refrigerated up to 3 days in airtight jar
  • Best used once cooled
  • Not suitable for freezing
