About This Dish

This Strawberry and Cream Cake is a timeless favourite, perfect for celebrations or everyday indulgence. With its airy sponge cake, fresh strawberries, and whipped cream filling, it’s both light and satisfying. This dessert brings a taste of summer to your table no matter the season.

Ingredients

Sponge Cake:
4 eggs
200g sugar
200g flour
Zest of 1 orange
Filling:
300g fresh strawberries (chopped)
500ml thickened cream
50g sugar
To Garnish:
Strawberries
Raspberries
Whipped cream

How to Make It

Prep Time: 25 mins | Cook Time: 25 mins | Total Time: 50 mins

  • Step 1: Preheat oven to 180°C (350°F). Line and grease a round cake tin.
  • Step 2: Beat eggs and sugar until pale and fluffy. Gently fold in flour and orange zest.
  • Step 3: Pour into the tin and bake for 25 minutes or until golden and springy to touch. Cool completely.
  • Step 4: Whip cream with sugar until soft peaks form. Fold in chopped strawberries.
  • Step 5: Slice cake into layers, spread cream mixture in between, and stack. Garnish with fresh strawberries, raspberries, and whipped cream.

Tucci’s Tips

  • For extra flavour, brush the sponge with a little orange juice before layering.
  • Make sure the sponge is fully cooled before adding cream, or it will melt.
  • Chill the cake for at least 1 hour before slicing for cleaner layers.

Variations

  • Berry Mix: Add blueberries or blackberries to the filling.
  • Chocolate Twist: Shave dark chocolate over the top before serving.
  • Liquor Infusion: Brush sponge layers with a splash of Limoncello or Marsala.
