Sicilian Sfinci
Sicilian sfinci are soft fried dough bites, golden outside and airy inside. Traditionally served dusted with sugar, they are simple, comforting and perfect for sharing as a sweet snack.
Ingredients
- 250 g all-purpose flour
- 200 ml water
- 10 g fresh yeast or 3 g dry yeast
- 10 g sugar
- 1 pinch salt
- Vegetable oil for frying
- Powdered sugar for dusting
How to Make It
- Dissolve yeast in lukewarm water
- Add sugar and stir
- Place flour in a bowl
- Pour in the yeast mixture
- Add salt and mix
- Stir until a soft sticky dough forms
- Cover and let rise until doubled
- Heat oil in a deep pan
- Scoop small portions of dough
- Drop gently into hot oil
- Fry until golden on all sides
- Drain on paper towels
- Dust with powdered sugar

- Dough should be soft and sticky
- Do not overcrowd the oil
- Maintain medium frying temperature
- Serve warm for best texture
