Sicilian Sfinci

Sicilian sfinci are soft fried dough bites, golden outside and airy inside. Traditionally served dusted with sugar, they are simple, comforting and perfect for sharing as a sweet snack.

Ingredients

  • 250 g all-purpose flour
  • 200 ml water
  • 10 g fresh yeast or 3 g dry yeast
  • 10 g sugar
  • 1 pinch salt
  • Vegetable oil for frying
  • Powdered sugar for dusting

How to Make It

  • Dissolve yeast in lukewarm water
  • Add sugar and stir
  • Place flour in a bowl
  • Pour in the yeast mixture
  • Add salt and mix
  • Stir until a soft sticky dough forms
  • Cover and let rise until doubled
  • Heat oil in a deep pan
  • Scoop small portions of dough
  • Drop gently into hot oil
  • Fry until golden on all sides
  • Drain on paper towels
  • Dust with powdered sugar

Tips

  • Dough should be soft and sticky
  • Do not overcrowd the oil
  • Maintain medium frying temperature
  • Serve warm for best texture

Storage

  • Best eaten fresh
  • Can be kept for up to 1 day
  • Not suitable for freezing
