Roasted Pumpkin
Roasted pumpkin is a simple and flavorful Italian side dish. Baked with olive oil and herbs, it becomes tender, slightly caramelized and naturally sweet. Perfect served with meat, fish or as a vegetarian option.
Ingredients
- 800 g pumpkin
- 30 ml extra virgin olive oil
- 1 garlic clove
- Fresh rosemary or thyme
- Salt to taste
- Black pepper to taste
How to Make It
- Peel the pumpkin and remove seeds
- Cut into evenly sized slices or cubes
- Place on a baking tray lined with baking paper
- Drizzle with olive oil
- Add crushed garlic and herbs
- Season with salt and pepper
- Toss gently to coat
- Spread in a single layer
- Bake at 200°C for about 25–30 minutes
- Turn halfway through cooking
- Cook until tender and lightly golden
Tips
- Cut evenly for uniform cooking
- Do not overcrowd the tray
- Add chili flakes for extra flavor
- Finish with a drizzle of olive oil before serving
