Roasted Pumpkin

Roasted pumpkin is a simple and flavorful Italian side dish. Baked with olive oil and herbs, it becomes tender, slightly caramelized and naturally sweet. Perfect served with meat, fish or as a vegetarian option.

Ingredients

  • 800 g pumpkin
  • 30 ml extra virgin olive oil
  • 1 garlic clove
  • Fresh rosemary or thyme
  • Salt to taste
  • Black pepper to taste

How to Make It

  • Peel the pumpkin and remove seeds
  • Cut into evenly sized slices or cubes
  • Place on a baking tray lined with baking paper
  • Drizzle with olive oil
  • Add crushed garlic and herbs
  • Season with salt and pepper
  • Toss gently to coat
  • Spread in a single layer
  • Bake at 200°C for about 25–30 minutes
  • Turn halfway through cooking
  • Cook until tender and lightly golden

Tips

  • Cut evenly for uniform cooking
  • Do not overcrowd the tray
  • Add chili flakes for extra flavor
  • Finish with a drizzle of olive oil before serving

Storage

  • Keep refrigerated for up to 2 days
  • Reheat in the oven
  • Not suitable for freezing
