Quinoa with Vegetables

Quinoa with vegetables is a light, nutritious and versatile dish. Combined with sautéed seasonal vegetables and olive oil, it becomes a fresh and balanced meal, perfect served warm or at room temperature.

Ingredients

  • 200 g quinoa
  • 1 zucchini
  • 1 carrot
  • 1 bell pepper
  • 30 ml extra virgin olive oil
  • 400 ml water
  • Salt to taste
  • Black pepper to taste

How to Make It

  • Rinse quinoa under cold water
  • Bring water to a boil and add quinoa
  • Cook for about 12–15 minutes until tender
  • Drain if needed and let cool slightly
  • Dice zucchini, carrot and pepper
  • Heat olive oil in a pan
  • Add vegetables and cook until tender
  • Season with salt and pepper
  • Combine quinoa with vegetables
  • Toss well and serve warm or at room temperature

Tips

  • Rinse quinoa well to remove bitterness
  • Cut vegetables evenly for uniform cooking
  • Add herbs like parsley or basil for freshness
  • Can be served cold as a salad

Storage

  • Keep refrigerated for up to 2 days
  • Not suitable for freezing
