Quinoa with Vegetables
Quinoa with vegetables is a light, nutritious and versatile dish. Combined with sautéed seasonal vegetables and olive oil, it becomes a fresh and balanced meal, perfect served warm or at room temperature.
Ingredients
- 200 g quinoa
- 1 zucchini
- 1 carrot
- 1 bell pepper
- 30 ml extra virgin olive oil
- 400 ml water
- Salt to taste
- Black pepper to taste
How to Make It
- Rinse quinoa under cold water
- Bring water to a boil and add quinoa
- Cook for about 12–15 minutes until tender
- Drain if needed and let cool slightly
- Dice zucchini, carrot and pepper
- Heat olive oil in a pan
- Add vegetables and cook until tender
- Season with salt and pepper
- Combine quinoa with vegetables
- Toss well and serve warm or at room temperature
Tips
- Rinse quinoa well to remove bitterness
- Cut vegetables evenly for uniform cooking
- Add herbs like parsley or basil for freshness
- Can be served cold as a salad
Storage
