Pralined Almonds

Pralined almonds are a classic Italian street treat, sweet, crunchy and fragrant. Made with just almonds, sugar and water, they develop a caramelized coating that becomes crisp as it cools. Perfect as a snack, gift or dessert topping.

Ingredients

  • 200 g whole almonds
  • 200 g sugar
  • 50 ml water

How to Make It

  • Place almonds, sugar and water in a large pan
  • Cook over medium heat, stirring continuously
  • The sugar will dissolve and then crystallize
  • Continue stirring as the sugar melts again
  • Cook until almonds are evenly caramelized
  • Transfer onto baking paper
  • Separate while still warm
  • Let cool completely before serving

Tips

  • Stir constantly to avoid burning
  • Use a wide pan for even coating
  • Work quickly once caramelized
  • Add cinnamon or vanilla if desired

Storage

  • Store in an airtight container for up to one week
  • Not suitable for freezing
