Pralined Almonds
Pralined almonds are a classic Italian street treat, sweet, crunchy and fragrant. Made with just almonds, sugar and water, they develop a caramelized coating that becomes crisp as it cools. Perfect as a snack, gift or dessert topping.
Ingredients
- 200 g whole almonds
- 200 g sugar
- 50 ml water
How to Make It
- Place almonds, sugar and water in a large pan
- Cook over medium heat, stirring continuously
- The sugar will dissolve and then crystallize
- Continue stirring as the sugar melts again
- Cook until almonds are evenly caramelized
- Transfer onto baking paper
- Separate while still warm
- Let cool completely before serving
Tips
- Stir constantly to avoid burning
- Use a wide pan for even coating
- Work quickly once caramelized
- Add cinnamon or vanilla if desired
Storage
- Store in an airtight container for up to one week
- Not suitable for freezing
