Pasta and Potatoes

Ingredients
- 320 g pasta
- 400 g potatoes
- 1 small onion
- 40 ml extra virgin olive oil
- 1 L vegetable stock
- 50 g grated parmesan (optional)
- Salt to taste
- Black pepper to taste
How to Make It
- Peel and dice the potatoes
- Finely chop the onion
- Heat olive oil in a pot
- Add onion and cook until soft
- Add potatoes and stir
- Pour in vegetable stock and bring to the boil
- Add pasta directly to the pot
- Cook stirring occasionally
- Add more stock if needed
- Cook until pasta is tender and creamy
- Season with salt and pepper
- Finish with parmesan if desired and serve hot
