Pasta and Potatoes

Pasta and potatoes is a traditional Southern Italian dish that is creamy, rustic and deeply comforting. The starch from the potatoes and pasta creates a naturally velvety texture, making this simple dish rich and satisfying. Perfect for a hearty everyday meal.

Ingredients

  • 320 g pasta
  • 400 g potatoes
  • 1 small onion
  • 40 ml extra virgin olive oil
  • 1 L vegetable stock
  • 50 g grated parmesan (optional)
  • Salt to taste
  • Black pepper to taste

How to Make It

  • Peel and dice the potatoes
  • Finely chop the onion
  • Heat olive oil in a pot
  • Add onion and cook until soft
  • Add potatoes and stir
  • Pour in vegetable stock and bring to the boil
  • Add pasta directly to the pot
  • Cook stirring occasionally
  • Add more stock if needed
  • Cook until pasta is tender and creamy
  • Season with salt and pepper
  • Finish with parmesan if desired and serve hot

Tips

  • Stir often to release starch and create creaminess
  • Use small pasta shapes
  • Add stock gradually if too thick
  • Finish with extra olive oil for flavour

Storage

  • Keep refrigerated for up to 2 days
  • Not suitable for freezing
