Pantesca Salad

Pantesca salad is a traditional dish from the island of Pantelleria, fresh, simple and full of Mediterranean flavours. Potatoes, tomatoes, olives and capers are combined with olive oil and herbs to create a light and aromatic salad perfect for warm days.

Ingredients

  • 500 g potatoes
  • 200 g cherry tomatoes
  • 40 g black olives
  • 20 g capers
  • 1 small red onion
  • 30 ml extra virgin olive oil
  • Fresh parsley or oregano
  • Salt to taste
  • Black pepper to taste

How to Make It

  • Boil potatoes in salted water until tender
  • Drain and let cool slightly
  • Peel and cut into chunks
  • Halve the cherry tomatoes
  • Slice the red onion thinly
  • Place everything in a bowl
  • Add olives and capers
  • Drizzle with olive oil
  • Season with salt and pepper
  • Add chopped herbs
  • Toss gently and serve

Tips

  • Let potatoes cool slightly before mixing
  • Use good quality olive oil
  • Slice onion very thin
  • Best served at room temperature

Storage

  • Keep refrigerated for up to 1 day
  • Not suitable for freezing
