Pan-Fried Peppers

Pan-fried peppers are a simple and flavourful Italian side dish. Slowly cooked with olive oil and garlic, they become tender, sweet and slightly caramelised. Perfect served with meat, fish or on toasted bread.

Ingredients

  • 600 g bell peppers
  • 30 ml extra virgin olive oil
  • 1 garlic clove
  • Salt to taste
  • Black pepper to taste
  • Fresh parsley optional

How to Make It

  • Wash the peppers and remove seeds
  • Slice into strips
  • Heat olive oil in a large pan
  • Add garlic and cook gently
  • Add peppers and stir well
  • Cook over medium heat
  • Cover and cook for about 15 minutes
  • Remove lid and cook until soft and slightly golden
  • Season with salt and pepper
  • Add parsley if desired and serve

Tips

  • Cook covered first to soften peppers
  • Remove lid to allow caramelisation
  • Slice evenly for uniform cooking
  • Use mixed peppers for colour

Storage

  • Keep refrigerated for up to 2 days
  • Best eaten within 24 hours
  • Not suitable for freezing
