Pan-Fried Peppers
Pan-fried peppers are a simple and flavourful Italian side dish. Slowly cooked with olive oil and garlic, they become tender, sweet and slightly caramelised. Perfect served with meat, fish or on toasted bread.
Ingredients
- 600 g bell peppers
- 30 ml extra virgin olive oil
- 1 garlic clove
- Salt to taste
- Black pepper to taste
- Fresh parsley optional
How to Make It
- Wash the peppers and remove seeds
- Slice into strips
- Heat olive oil in a large pan
- Add garlic and cook gently
- Add peppers and stir well
- Cook over medium heat
- Cover and cook for about 15 minutes
- Remove lid and cook until soft and slightly golden
- Season with salt and pepper
- Add parsley if desired and serve
Tips
- Cook covered first to soften peppers
- Remove lid to allow caramelisation
- Slice evenly for uniform cooking
- Use mixed peppers for colour
Storage
- Keep refrigerated for up to 2 days
- Best eaten within 24 hours
- Not suitable for freezing
