Pan-Fried Artichokes

Pan-fried artichokes are a classic Italian side dish, tender and aromatic with Mediterranean flavors. Slowly cooked with garlic, parsley and olive oil, they become soft and lightly golden. Perfect served with meat, fish or as part of an antipasto.

Ingredients

  • 6 artichokes
  • 1 garlic clove
  • 30 ml extra virgin olive oil
  • 2 tbsp chopped parsley
  • 100 ml water
  • Salt to taste
  • Black pepper to taste
  • Lemon juice optional

How to Make It

  • Clean the artichokes removing tough outer leaves
  • Trim the tips and peel the stems
  • Cut into wedges and remove any choke
  • Place in water with lemon juice to prevent browning
  • Heat olive oil in a large pan
  • Add garlic and cook gently
  • Drain artichokes and add to the pan
  • Stir and cook for a few minutes
  • Add water, cover and cook for about 15 minutes
  • Remove lid and cook until liquid evaporates
  • Season with salt and pepper
  • Finish with chopped parsley and serve

Tips

  • Keep artichokes in lemon water to avoid oxidation
  • Cook covered first to soften them
  • Remove lid at the end for slight browning
  • Use fresh parsley for best flavor

Storage

  • Store in the fridge for up to 2 days
  • Reheat gently in a pan
  • Not suitable for freezing
