Eggplants: | 2 large |
Ham: | 200 g (≈ 7 oz) |
Cheese (Provolone or Mozzarella): | 200 g (≈ 7 oz) |
Tomato Sauce: | 250 ml (≈ 1 cup) |
Parmesan Cheese: | 50 g (≈ ½ cup), grated |
Olive Oil: | As needed for frying/grilling |
Salt & Pepper: | To taste |
Fresh Basil: | A few leaves |
How to Make It
Prep Time: 15 mins | Cook Time: 30 mins | Total Time: 45 mins
- Step 1: Slice eggplants lengthwise into thin strips. Sprinkle with salt and let sit for 10 minutes to remove excess moisture, then pat dry.
- Step 2: Grill or lightly fry the eggplant slices until soft and golden. Set aside.
- Step 3: Spread a little tomato sauce on the bottom of a baking dish.
- Step 4: On each eggplant slice, place a piece of ham and a slice of cheese. Roll up tightly.
- Step 5: Arrange the rolls in the baking dish. Cover with remaining tomato sauce, sprinkle with grated Parmesan, and top with extra cheese if desired.
- Step 6: Bake at 180°C (350°F) for 20–25 minutes until bubbly and golden on top. Garnish with fresh basil and serve hot.
