About This Dish

This dish is a classic from the Amalfi Coast, where lemons grow in abundance. With minimal ingredients and maximum flavor, it’s an Italian staple that’s both refreshing and indulgent. The creamy texture is achieved without heavy cream — just starchy pasta water, olive oil, and a sprinkle of cheese for a silky finish.

Ingredients (Serves 2)

Spaghetti: 200 g
Lemon Zest: From 1 lemon
Lemon Juice: From 1 lemon
Extra Virgin Olive Oil: 3 tbsp
Grated Parmigiano Reggiano: 30 g (optional)
Salt & Black Pepper: To taste
Fresh Parsley: For garnish

How to Make It

Prep Time: 5 mins | Cook Time: 10 mins | Total Time: 15 mins

  • Step 1: Cook spaghetti in salted boiling water until al dente. Reserve 1 cup of pasta water before draining.
  • Step 2: In a pan, combine olive oil, lemon zest, and a splash of pasta water. Heat gently to release the aroma.
  • Step 3: Add the drained pasta, lemon juice, and toss over low heat. Add more pasta water as needed to create a creamy sauce.
  • Step 4: Stir in grated Parmigiano if using, and adjust seasoning with salt and pepper.
  • Step 5: Serve immediately with a sprinkle of parsley and extra lemon zest for freshness.

Tucci’s Tips

Always use unwaxed, organic lemons for the best zest and flavor.
A splash of cream or a knob of butter can make it richer (optional).
Pair with a crisp white wine like Falanghina for an authentic experience.

Variations

  • Seafood Twist: Add sautéed prawns for a luxurious touch.
  • Herbal Note: Swap parsley for fresh basil or thyme for a different aroma.
  • Dairy-Free: Skip cheese and add extra olive oil for a silky vegan version.
