Legumes & Grains Soup
This hearty legumes and grains soup is a nourishing rustic Italian dish. A mix of pulses and cereals creates a wholesome, filling meal with deep flavor. Finished with olive oil, it’s simple comfort food perfect for cooler days.
Ingredients
- 200 g mixed legumes and grains
- 1 carrot
- 1 celery stalk
- 1 small onion
- 1 potato (about 200 g)
- 2 tbsp extra virgin olive oil
- 1.2 L vegetable stock
- Salt to taste
- Black pepper to taste
How to Make It
- Rinse the legumes and grains under running water
- Finely chop carrot, celery and onion
- Peel and dice the potato
- Heat olive oil in a pot
- Add carrot, celery and onion and cook gently
- Add the diced potato and stir
- Add the legumes and grains
- Pour in the vegetable stock
- Bring to a boil, then reduce heat
- Simmer for 50–60 minutes, stirring occasionally
- Season with salt and pepper
- Serve hot with a drizzle of olive oil
Tips
- Soak dried legumes overnight if using
- Stir occasionally to prevent sticking
- Add rosemary or bay leaf for extra flavor
- Finish with extra olive oil before serving
Storage
- Keep refrigerated for up to 2 days
- Can be frozen once cooled
