Legumes & Grains Soup

This hearty legumes and grains soup is a nourishing rustic Italian dish. A mix of pulses and cereals creates a wholesome, filling meal with deep flavor. Finished with olive oil, it’s simple comfort food perfect for cooler days.

Ingredients

  • 200 g mixed legumes and grains
  • 1 carrot
  • 1 celery stalk
  • 1 small onion
  • 1 potato (about 200 g)
  • 2 tbsp extra virgin olive oil
  • 1.2 L vegetable stock
  • Salt to taste
  • Black pepper to taste

How to Make It

  • Rinse the legumes and grains under running water
  • Finely chop carrot, celery and onion
  • Peel and dice the potato
  • Heat olive oil in a pot
  • Add carrot, celery and onion and cook gently
  • Add the diced potato and stir
  • Add the legumes and grains
  • Pour in the vegetable stock
  • Bring to a boil, then reduce heat
  • Simmer for 50–60 minutes, stirring occasionally
  • Season with salt and pepper
  • Serve hot with a drizzle of olive oil

Tips

  • Soak dried legumes overnight if using
  • Stir occasionally to prevent sticking
  • Add rosemary or bay leaf for extra flavor
  • Finish with extra olive oil before serving

Storage

  • Keep refrigerated for up to 2 days
  • Can be frozen once cooled
