Ingredients (Makes 12–15 Candies)

Sugar: 2 tbsp (25 g)
Ground Cinnamon: 1 tsp
Ground Ginger: 1 tsp
Honey (or Manuka): 1 tsp
Fresh Lemon Juice: ½ lemon (about 1 tbsp)
Water: 2 tsp (10 ml)
Icing Sugar: For dusting and molding

How to Make It

Prep Time: 5 mins | Cook Time: 10 mins | Total Time: 15 mins

  • Step 1: Combine sugar, cinnamon, ginger, honey, lemon juice, and water in a small saucepan.
  • Step 2: Stir and bring to a gentle boil over medium-low heat.
  • Step 3: Continue cooking until the mixture thickens into a syrup (about 5–7 minutes).
  • Step 4: On a tray dusted with icing sugar, make small indents using your fingertip.
  • Step 5: Pour a little of the hot syrup into each indent and let cool completely.
  • Step 6: Once hardened, remove gently and store in an airtight container in the fridge.
