Grissini

Grissini are thin, crunchy breadsticks typical of Italian bakeries. Light and crisp, they are perfect as a snack or served with antipasti. Simple to prepare, they can also be flavored with herbs or seeds.

Ingredients

  • 400 g plain flour
  • 220 ml lukewarm water
  • 7 g dry yeast
  • 30 ml extra virgin olive oil
  • 8 g salt
  • Semolina or flour for dusting

How to Make It

  • Dissolve yeast in lukewarm water
  • Place flour in a bowl
  • Add yeast mixture and olive oil
  • Mix until a dough forms
  • Add salt and knead until smooth
  • Cover and let rise for about 1 hour
  • Roll dough into a rectangle
  • Cut into thin strips
  • Stretch each strip gently
  • Place on a lined baking tray
  • Bake at 200°C for 15–20 minutes
  • Cook until golden and crisp

  • Stretch gently for thin grissini
  • Add sesame, rosemary or seeds
  • Bake until fully crisp
  • Cool before storing

Storage

  • Store in an airtight container for several days
  • Not suitable for freezing
