About This Dish

A true comfort meal, this creamy sausage and mushroom fusilli is rich, indulgent, and irresistibly Italian. The sauce coats every twist of pasta perfectly, while the combination of meat, mushrooms, and cream delivers that deep umami warmth we all crave after a long day.

Ingredients (Serves 2)

Fusilli: 220 g (about 8 oz)
Mushrooms (thinly sliced): 160 g (1 ¾ cups)
Sausages (minced): 2–3 medium (about 250 g / 9 oz)
Cream: 150 ml (⅔ cup)
Grated Parmigiano: 30 g (¼ cup)
Garlic Cloves (peeled): 2
Salt & Black Pepper: To taste
Olive Oil: 2 tbsp

How to Make It

Prep Time: 10 mins | Cook Time: 20 mins | Total Time: 30 mins

  • Step 1: In a large pan, heat olive oil and sauté garlic until golden. Remove the garlic cloves.
  • Step 2: Add the minced sausage and cook for 2–3 minutes, breaking it apart as it browns.
  • Step 3: Add mushrooms and cook for 5–6 minutes until soft and fragrant.
  • Step 4: Pour in the cream, add Parmigiano, salt, and pepper, and stir to combine.
  • Step 5: Simmer the sauce gently for 3 minutes.
  • Step 6: Toss in the cooked al dente fusilli and finish cooking in the sauce for 1–2 minutes.
  • Step 7: Serve immediately with extra Parmigiano and black pepper on top.

Tucci’s Tips

Remove the sausage casing for a smoother texture in the sauce.
For extra depth, add a splash of white wine after browning the sausage.
If you love spice, throw in a pinch of chilli flakes while sautéing the meat.

Variations

  • Truffle Touch: Add a drizzle of truffle oil before serving for a gourmet finish.
  • Green Boost: Stir in a handful of baby spinach for extra colour and nutrients.
  • Cheesy Upgrade: Use Pecorino Romano instead of Parmigiano for a sharper bite.

Did You Know?

Historical Fact: Fusilli originates from Southern Italy, where families traditionally shaped it by wrapping pasta around knitting needles — “fuso” means spindle in Italian!

Fun Fact: Creamy pasta with sausage is a modern twist on the rustic “pasta alla Norcina,” an Umbrian classic named after the town of Norcia — famous for its sausages and truffles.
