Born out of the genius of Italian home cooks, Frittata di Pasta is a beloved way to reuse leftover pasta. In Naples, it’s a nostalgic favorite often packed for seaside picnics. With its golden crust and soft, savory interior, it’s a dish that embodies simplicity and flavor in every bite.

Ingredients (Serves 6–8)

Cooked Pasta: 1 kg (≈ 2.2 lbs)
Eggs: 10 (1 per 100 g pasta)
Grated Parmesan: 50 g (≈ ½ cup)
Ham: 300 g (≈ 10.5 oz), diced
Salami: 150 g (≈ 5 oz), diced
Salt & Pepper: To taste
Olive Oil: For frying

How to Make It

Prep Time: 10 mins | Cook Time: 20 mins | Total Time: 30 mins

  • Step 1: In a large bowl, beat eggs with Parmesan, salt, and pepper.
  • Step 2: Add cooked pasta, ham, and salami. Mix until well combined.
  • Step 3: Heat olive oil in a large non-stick pan over medium heat.
  • Step 4: Pour in the pasta mixture, pressing lightly to compact it. Cook until the bottom is golden (about 8–10 minutes).
  • Step 5: Flip using a plate or lid, then slide back into the pan to cook the other side until crispy and set.
  • Step 6: Serve warm or cold — it’s delicious either way!

Tucci’s Tips

Best with spaghetti or bucatini, but any pasta works!
Let it rest for 5 minutes before slicing for clean cuts.
