Fried Zucchini
Simple and delicious fried zucchini coated in flour and fried until golden. Lightly crispy outside and tender inside, perfect as a side dish or snack.
Ingredients
- 570 g zucchini (1.25 lb)
- 30 g coarse salt (2 tbsp)
- 100 g all-purpose flour (3/4 cup)
- 600 g peanut oil for frying (about 2 1/2 cups)
How to Make It
- Wash and trim zucchini
- Cut into 1 cm thick slices
- Cut slices into thin sticks
- Place in a colander and add coarse salt
- Cover with a plate and add weight
- Let rest 2 hours to release moisture
- Rinse zucchini and dry well
- Heat oil to 170°C / 340°F
- Coat zucchini in flour
- Shake off excess flour
- Fry in batches for 4 to 5 minutes
- Drain on paper towel
- Serve hot
Tips
- Resting removes excess water for crispiness
- Dry zucchini well before frying
- Fry in small batches to keep oil hot
- Taste before adding extra salt

- Best eaten immediately
- Not suitable for storing or freezing
