Fried Zucchini

Simple and delicious fried zucchini coated in flour and fried until golden. Lightly crispy outside and tender inside, perfect as a side dish or snack.

Ingredients

  • 570 g zucchini (1.25 lb)
  • 30 g coarse salt (2 tbsp)
  • 100 g all-purpose flour (3/4 cup)
  • 600 g peanut oil for frying (about 2 1/2 cups)

How to Make It

  • Wash and trim zucchini
  • Cut into 1 cm thick slices
  • Cut slices into thin sticks
  • Place in a colander and add coarse salt
  • Cover with a plate and add weight
  • Let rest 2 hours to release moisture
  • Rinse zucchini and dry well
  • Heat oil to 170°C / 340°F
  • Coat zucchini in flour
  • Shake off excess flour
  • Fry in batches for 4 to 5 minutes
  • Drain on paper towel
  • Serve hot

Tips

  • Resting removes excess water for crispiness
  • Dry zucchini well before frying
  • Fry in small batches to keep oil hot
  • Taste before adding extra salt

Storage

  • Best eaten immediately
  • Not suitable for storing or freezing
