Fried Sage in Batter
A simple and fragrant appetizer made with fresh sage leaves dipped in a light batter and fried until golden. Perfect as a crunchy snack or served with aperitivo.
Ingredients
- 20 fresh sage leaves
- 100 g all-purpose flour (3/4 cup)
- 150 ml sparkling water, cold (2/3 cup)
- Pinch of salt
- Vegetable oil for frying (about 500 ml or 2 cups)
How to Make It
- Wash sage leaves and pat dry
- Heat frying oil in a small pot
- In a bowl combine flour and salt
- Slowly whisk in cold sparkling water
- Mix until a smooth batter forms
- Dip each sage leaf into the batter
- Let excess batter drip off
- Fry a few leaves at a time
- Cook until lightly golden
- Remove with a slotted spoon
- Drain on paper towel
- Season lightly with salt and serve hot
Tips
- Use very cold sparkling water for a lighter batter
- Do not overcrowd the oil while frying
- Serve immediately for best texture
- Choose large intact sage leaves
Storage
- Best eaten immediately after frying
- Not suitable for storing or freezing as they lose crispness
