About This Dish

Extra Fluffy Eggs are inspired by the Italian love for simplicity with a touch of elegance. These “cloud eggs” are all about texture — light as air, golden on top, and naturally high in protein. Perfect for those mornings when you want something quick yet gourmet.

Ingredients (Per Portion)

Egg: 1 large
Salt: To taste (about a pinch)
Grated Parmesan (optional): 1 tsp (for savoury depth)
Black Pepper (optional): A pinch

How to Make It

Prep Time: 5 mins | Cook Time: 6–8 mins | Total Time: 10–12 mins

  • Step 1: Separate the egg white from the yolk carefully.
  • Step 2: Beat the egg white with a pinch of salt until stiff peaks form.
  • Step 3: Spoon or pipe the whipped white onto a lined baking tray, shaping a fluffy mound.
  • Step 4: In a small bowl, mix the yolk with salt, cheese, or pepper if desired.
  • Step 5: Gently brush or drizzle the yolk over the top of the fluffy white — avoid deflating it.
  • Step 6: Bake or air fry at 180°C / 350°F for 6–8 minutes until golden on top.
  • Step 7: Serve immediately — light, airy, and full of flavour.

Tucci’s Tips

For an extra creamy center, undercook the yolk slightly.
Add a sprinkle of chives or herbs for freshness.
Double the recipe and serve on toast with avocado for a full meal.

Variations

  • Cheesy Cloud: Add mozzarella or ricotta for extra softness.
  • Spicy Touch: Dust the top with paprika or chili powder before baking.
  • Herbal Aroma: Add basil or oregano for an Italian twist.

Did You Know?

Historical Fact: Cloud eggs date back to 17th-century France, where they were served as “eggs in snow” — a dish reserved for nobles and special occasions.

Fun Fact: The fluffiness comes from air trapped inside the egg whites — each bubble expands during baking, creating that perfect cloud-like texture.

Storage & Thank You

These eggs are best eaten fresh for maximum fluffiness. If needed, refrigerate leftovers for up to 24 hours and reheat gently in the air fryer or oven.

Can it be frozen? No — freezing will ruin the airy texture. Always enjoy freshly baked.
