Crispy Vegetable Fritters

Crispy vegetable fritters are a simple and colourful dish made with mixed vegetables coated in a light batter and fried until golden. Crunchy outside and tender inside, they are perfect as a starter, snack or side dish.

Ingredients

  • 150 g carrots
  • 150 g zucchini
  • 100 g onion
  • 120 g all-purpose flour
  • 180 ml water
  • Salt to taste
  • Black pepper to taste
  • Vegetable oil for frying

How to Make It

  • Wash and trim vegetables
  • Grate carrots and zucchini
  • Slice onion thinly
  • Place vegetables in a bowl
  • Add flour
  • Pour in water gradually
  • Mix to form a thick batter
  • Season with salt and pepper
  • Heat oil in a pan
  • Spoon small portions into hot oil
  • Flatten slightly
  • Fry until golden and crisp
  • Turn and cook the other side
  • Drain on paper towels

Tips

  • Do not overcrowd the pan
  • Squeeze excess moisture from vegetables
  • Use medium hot oil
  • Serve immediately for best crunch

Storage

  • Best eaten fresh
  • Can be kept refrigerated for up to 1 day
  • Not suitable for freezing
