Crispy Vegetable Fritters
Crispy vegetable fritters are a simple and colourful dish made with mixed vegetables coated in a light batter and fried until golden. Crunchy outside and tender inside, they are perfect as a starter, snack or side dish.
Ingredients
- 150 g carrots
- 150 g zucchini
- 100 g onion
- 120 g all-purpose flour
- 180 ml water
- Salt to taste
- Black pepper to taste
- Vegetable oil for frying
How to Make It
- Wash and trim vegetables
- Grate carrots and zucchini
- Slice onion thinly
- Place vegetables in a bowl
- Add flour
- Pour in water gradually
- Mix to form a thick batter
- Season with salt and pepper
- Heat oil in a pan
- Spoon small portions into hot oil
- Flatten slightly
- Fry until golden and crisp
- Turn and cook the other side
- Drain on paper towels
Tips
- Do not overcrowd the pan
- Squeeze excess moisture from vegetables
- Use medium hot oil
- Serve immediately for best crunch

- Best eaten fresh
- Can be kept refrigerated for up to 1 day
- Not suitable for freezing
