Crispy Roasted Chickpeas

Crispy roasted chickpeas are a healthy and crunchy snack seasoned with olive oil and simple spices, then baked until golden. They are perfect as an appetizer, salad topping or light nibble.

Ingredients

  • 400 g cooked chickpeas (about 2 cups)
  • 30 ml extra virgin olive oil (2 tbsp)
  • Salt to taste
  • Black pepper to taste
  • Optional spices such as paprika or rosemary

How to Make It

  • Drain the chickpeas well
  • Pat dry with paper towels
  • Remove loose skins if desired
  • Place chickpeas in a bowl
  • Add olive oil
  • Season with salt and spices
  • Mix well to coat evenly
  • Spread on a baking tray
  • Bake at 200°C / 400°F
  • Cook for about 25 to 30 minutes
  • Shake the tray halfway through
  • Bake until golden and crispy

Tips

  • Dry chickpeas very well before baking
  • Do not overcrowd the tray
  • Shake during baking for even cooking
  • Allow to cool slightly to become crispier

Storage

  • Keep at room temperature for up to 2 days
  • Best eaten within 24 hours
  • Not suitable for freezing
