What I Used (Makes 1 Tray)
Metric shown first; US measurements in parentheses.
| Mixed seeds (pumpkin, sunflower, etc.): | 300 g (≈ 2 cups) |
| Chia seeds: | 150 g (≈ 1 cup) |
| Water: | Enough to soak (≈ 350–400 ml / 1½ cups) |
| Olive oil: | 2 tbsp (≈ 30 ml / 1 fl oz) |
How to Make It
Prep Time: 15 mins | Bake Time: 20 mins | Total: ~35 mins
- Step 1: In a bowl, combine the mixed seeds and chia seeds. Add enough water to fully cover them and let soak for 15 minutes until a thick gel forms.
- Step 2: Line a baking tray with baking paper and drizzle a little olive oil over the base.
- Step 3: Spread the soaked seed mixture into a thin, even layer, pressing it flat with a spoon or spatula.
- Step 4: Drizzle more olive oil over the top and bake at 200°C (392°F) for about 20 minutes, until crisp and golden.
- Step 5: Allow to cool, then break into rustic pieces and enjoy!
Tucci’s Tips
| Soak long enough for the chia to release its gel — that’s the secret binder. |
| Use parchment paper — the crisps can stick to metal trays. |
| Add a sprinkle of sea salt or herbs before baking for extra flavour. |
Variations
- Spicy: Add chilli flakes or paprika before baking.
- Herbed: Mix in dried rosemary, oregano, or thyme for aromatic crisps.
- Nutty: Add crushed almonds or sesame seeds for extra crunch.
Did You Know?
Historical Fact: Seed-based crackers have roots in Scandinavian cuisine, where crispbreads were a staple for centuries — durable, nutritious, and easy to store.
Fun Fact: Chia seeds absorb up to 10 times their weight in water, creating the perfect natural “glue” for holding the crisps together.
