Chimichurri Sauce

A vibrant and aromatic sauce made with fresh parsley, garlic, and olive oil. Perfect for grilled meats, vegetables, or as a flavorful dressing.

Ingredients

  • 50 g fresh parsley (1 packed cup)
  • 2 garlic cloves
  • 1 tsp dried oregano (1 tsp)
  • 1/2 tsp chili flakes (optional)
  • 80 ml extra virgin olive oil (1/3 cup)
  • 20 ml red wine vinegar (1 tbsp + 1 tsp)
  • Salt to taste
  • Black pepper to taste

How to Make It

  • Wash and dry the parsley
  • Finely chop the parsley
  • Mince the garlic cloves
  • Place parsley and garlic in a bowl
  • Add oregano and chili flakes
  • Pour in vinegar and olive oil
  • Mix well until combined
  • Season with salt and pepper
  • Let rest for 10 minutes before serving

Tips

  • Chop herbs by hand for better texture
  • Adjust vinegar for more acidity
  • Add lemon juice for a fresher variation
  • Let the sauce rest to develop flavour

Storage

  • Keeps 3 days refrigerated in airtight container
  • Best eaten within 24 hours
  • Not suitable for freezing
