Tucci’s Tips
Don’t skip the marination — lemon breaks down the fibres for extra tenderness.
For extra crunch, mix a bit of semolina or cornflour into your coating flour.
Serve immediately — this popcorn is best hot and crisp!
Variations
- Spicy Version: Add chili flakes or paprika to the flour for heat.
- Garlic Twist: Marinate with a crushed garlic clove for a richer aroma.
- Herb Upgrade: Sprinkle with dried oregano or thyme right after frying.
Did You Know?
Historical Fact: In southern Italy, lemon is often used to marinate meat before frying — a trick passed down from coastal families who used citrus to tenderize and flavour without dairy.
Fun Fact: The term “popcorn chicken” became popular in the 1990s, but Italians had been enjoying lemon-fried chicken bites long before — especially during village festivals!
