Ingredients

2 medium carrots (grated)
2 medium zucchinis (grated, squeezed of excess liquid)
2 eggs
60g grated cheese (Parmesan or cheddar)
40g breadcrumbs
Salt & black pepper to taste
Olive oil spray (for baking)

How to Make It

Prep Time: 15 mins | Cook Time: 20–25 mins | Total Time: 40 mins

  • Step 1: Preheat oven to 200°C (400°F). Line a baking tray with parchment paper and lightly oil.
  • Step 2: Grate the zucchini and squeeze out excess water using a clean towel or paper towel.
  • Step 3: Mix zucchini, carrots, eggs, cheese, breadcrumbs, salt, and pepper in a large bowl.
  • Step 4: Shape into patties and place on the prepared tray. Spray lightly with olive oil.
  • Step 5: Bake for 20–25 minutes, flipping halfway, until golden and crispy. Serve warm.
