About This Dish

Caramelised onions are a true Italian kitchen secret — turning humble onions into a luxurious condiment. With their sweet and tangy profile, they complement cheeses, meats, and even eggs. Traditionally made for antipasto boards or preserved in jars for quick flavor boosts, this recipe is easy, versatile, and absolutely irresistible.

Ingredients

Onions: 500 g (≈ 4 medium)
White Sugar: 100 g (≈ ½ cup)
Brown Sugar: 50 g (≈ ¼ cup)
White Wine Vinegar (or Rum/Whiskey): ½ cup (≈ 120 ml)
Water: Enough to cover onions by 1 cm

How to Make It

Prep Time: 10 mins | Cook Time: 40 mins | Total Time: 50 mins

  • Step 1: Peel and finely slice the onions into thin rings or strips for even cooking.
  • Step 2: Place onions in a tall pot along with both sugars and the vinegar (or your chosen spirit for extra depth).
  • Step 3: Add just enough water to cover the onions by about 1 cm (finger’s width).
  • Step 4: Bring the mixture to a boil over high heat, then reduce to low and simmer uncovered for 30–40 minutes.
  • Step 5: Stir occasionally until most liquid evaporates and onions become glossy, sticky, and deep golden in color.
  • Step 6: Let cool before storing in a sterilized jar. Keep refrigerated.

Tucci’s Tips

Use a mix of white and brown sugar for depth of flavor.
For extra aroma, add a splash of whiskey or rum instead of vinegar.
Always cook on low heat to avoid burning the sugars and onions.

Variations

  • Savory Kick: Add a pinch of chili flakes for heat.
  • Herbal Touch: Mix in a sprig of rosemary during cooking for a Mediterranean twist.
  • Balsamic Style: Swap white wine vinegar for aged balsamic for a rich, dark flavor.
