Camilla Cake is an Italian classic inspired by the beloved “Camille” snack cakes. This recipe transforms fresh carrots, ground almonds, and orange juice into a light and tender cake that’s naturally dairy-free. Perfect for breakfast, merenda (afternoon snack), or as a wholesome dessert paired with tea or coffee.
Ingredients
| Carrots (grated): | 250 g |
| Flour: | 200 g |
| Sugar: | 200 g |
| Almond Meal: | 100 g |
| Eggs: | 3 |
| Baking Powder: | 16 g |
| Vegetable Oil: | 80 g |
| Almond Milk: | 100 g |
| Orange Juice: | Juice of 1 orange |
| Vanilla Extract: | To taste |
| Salt: | Pinch |
How to Make It
Prep Time: 20 mins | Bake Time: 40 mins | Total Time: 1 hour
- Step 1: Preheat oven to 180°C (350°F). Grease and flour a round cake tin.
- Step 2: Peel and finely grate the carrots.
- Step 3: In a bowl, whisk eggs and sugar until light and fluffy.
- Step 4: Add vegetable oil, almond milk, orange juice, and vanilla. Mix well.
- Step 5: Fold in grated carrots, then add flour, almond meal, baking powder, and a pinch of salt. Mix until smooth.
- Step 6: Pour batter into the prepared tin and bake for 35–40 minutes or until a toothpick comes out clean.
- Step 7: Cool completely before slicing. Optionally dust with icing sugar.
