Baked Zucchini

A light and easy side dish made with sliced zucchini baked with olive oil and herbs. Tender inside with lightly golden edges, perfect with any main course.

Ingredients

  • 600 g zucchini (1.3 lb)
  • 40 ml extra virgin olive oil (3 tbsp)
  • 1 garlic clove
  • 1 tbsp breadcrumbs (10 g)
  • Fresh parsley
  • Salt to taste
  • Black pepper to taste

How to Make It

  • Preheat oven to 200°C / 400°F
  • Wash and slice zucchini into rounds
  • Place zucchini in a bowl
  • Add olive oil
  • Mince garlic and add to the bowl
  • Season with salt and pepper
  • Mix to coat evenly
  • Arrange on a lined baking tray
  • Sprinkle breadcrumbs over the top
  • Bake about 25 minutes until golden
  • Sprinkle chopped parsley before serving

Tips

  • Do not overcrowd the tray for better browning
  • Slice zucchini evenly for uniform cooking
  • Add Parmesan for richer flavour
  • Serve warm or at room temperature

Storage

  • Keeps 2 days refrigerated in airtight container
  • Best eaten fresh
  • Not suitable for freezing
