Baked Zucchini
A light and easy side dish made with sliced zucchini baked with olive oil and herbs. Tender inside with lightly golden edges, perfect with any main course.
Ingredients
- 600 g zucchini (1.3 lb)
- 40 ml extra virgin olive oil (3 tbsp)
- 1 garlic clove
- 1 tbsp breadcrumbs (10 g)
- Fresh parsley
- Salt to taste
- Black pepper to taste
How to Make It
- Preheat oven to 200°C / 400°F
- Wash and slice zucchini into rounds
- Place zucchini in a bowl
- Add olive oil
- Mince garlic and add to the bowl
- Season with salt and pepper
- Mix to coat evenly
- Arrange on a lined baking tray
- Sprinkle breadcrumbs over the top
- Bake about 25 minutes until golden
- Sprinkle chopped parsley before serving
Tips
- Do not overcrowd the tray for better browning
- Slice zucchini evenly for uniform cooking
- Add Parmesan for richer flavour
- Serve warm or at room temperature
Storage
- Keeps 2 days refrigerated in airtight container
- Best eaten fresh
- Not suitable for freezing
