Baked mussels, or “Cozze Gratinate,” are a popular Italian antipasto, especially along the southern coast. The secret lies in the breadcrumb topping infused with garlic, lemon zest, and parsley — simple ingredients that create an explosion of Mediterranean flavor. This dish is perfect for seafood lovers who want elegance with minimal effort.

Mussels: 500 g (with their water)
Breadcrumbs: 100 g (≈ 1 cup)
Garlic: 1 clove, minced
Lemon Zest: From 1 lemon
Fresh Parsley: 10 g, chopped
Extra Virgin Olive Oil: 30 g (≈ 2 tbsp)
Black Pepper: To taste

How to Make It

Prep Time: 10 mins | Cook Time: 10 mins | Total Time: 20 mins

  • Step 1: Clean mussels thoroughly under cold water, removing any beards. Discard any that remain open after tapping.
  • Step 2: Steam mussels in a large pot with a splash of water until they just open. Remove from heat and let cool slightly.
  • Step 3: Discard the empty shell half and arrange mussels with meat on a baking tray.
  • Step 4: In a bowl, mix breadcrumbs, minced garlic, chopped parsley, lemon zest, olive oil, and black pepper.
  • Step 5: Spoon the mixture onto each mussel, pressing lightly to adhere.
  • Step 6: Bake in a preheated oven at 200°C (390°F) for 8–10 minutes until golden and fragrant. Serve warm with lemon wedges.

Tucci’s Tips

Use fresh mussels for the best flavor — frozen ones won’t give the same juiciness.
Don’t overcook mussels; they become tough quickly.
Serve with a drizzle of lemon juice right before eating for brightness.

Variations

  • Cheesy Option: Add grated Parmigiano to the breadcrumb mix for extra flavor.
  • Spicy Twist: Sprinkle a pinch of chili flakes into the mixture for heat.
  • Citrus Boost: Add orange zest for a unique Mediterranean note.

Storage & Thank You

Best enjoyed immediately after baking. If needed, refrigerate for up to 1 day and reheat briefly in the oven to restore crispiness.

Can it be frozen? Not recommended — mussels lose their texture when frozen.
