Ingredients (Serves 8–10)

Flour (00): 200 g (≈ 1 ½ cups)
Corn Flour: 100 g (≈ ¾ cup)
Almond Flour: 200 g (≈ 2 cups)
Chopped Almonds: 40 g (≈ ¼ cup), toasted
Baking Powder: 10 g (≈ 2 tsp)
Vanilla Extract: 2 tsp
Fine Salt: 2 g (a pinch)
Butter: 250 g (≈ 1 cup), cold and diced
Eggs: 2

How to Make It

Prep Time: 15 mins | Cook Time: 40 mins | Total Time: 55 mins

  • Step 1: Preheat oven to 180°C (350°F). Grease a 24 cm (9-inch) cake tin.
  • Step 2: In a large bowl, combine all dry ingredients: flour, corn flour, almond flour, chopped almonds, baking powder, salt, and vanilla.
  • Step 3: Add cold butter pieces and eggs to the dry mixture. Using your hands, rub and crumble the mixture until it forms coarse crumbs — do not overwork.
  • Step 4: Spread the crumbs evenly in the cake tin without pressing too much.
  • Step 5: Bake for about 40 minutes until golden and crisp on top.
